Up until recently breakfast was something I never engaged in , apart from weekends, and at that it was always more brunch than breakfast. One of the first things I have been working on with Sarah (the dietician I have been seeing to help with my new healthy lifestyle) is to start eating breakfast. It took two weeks for me to crack … by crack I mean I now wake up hungry and really find it hard to skip breakfast!
How did I do it? Well there were a few ways.
First of all was setting my table for breakfast the night before. I am a very visual person so the way something looks is very important to me. I like pretty things so setting the table at night has become somewhat of a ritual here in the cottage. I also love fresh flowers, so each day I have to have a pretty bunch of flowers on the table to welcome me in the morning.
The second big thing was setting up what I call my breakfast bar in the kitchen. Here I have a big jar of porridge oats (thankfully I love porridge!) a jar of milled flaxseeds, cinnamon and fresh nutmeg and supplements (recommended by my Dietician after analysing my food diary and seeing I am deficient in a few vitamins).
Most mornings start with a cup of hot water and lemon and porridge with some fruit. I’ve come up with a nifty time saving plan for the lemon. I buy them in bulk, slice them and put them in the freezer. Then all I have to do is pop one in my mug of hot water in the morning.
At weekends, or when I’m working from home I like to change it up and smoked salmon and eggs is a favourite, bulked up with lettuce, my poor (but healthier) alternative to bread.
Honestly what’s not to love? I have to admit, aside from the porridge, I do find prepping takes a lot of time but it’s worth it. I’d love to hear some of your breakfast ideas and suggestions. I’m mostly vegetarian (I like fish and chicken/turkey) and I’m trying to avoid bread with every meal. So far I find it almost impossible not to have bread at lunch so I prefer to keep away from it in the morning. I’m also looking at upping my protein intake in the morning.
