Fluffy Pancakes

So who’s sick of pancakes?

Not me … I had some for breakfast!

How do you make yours?
Mine consists of the following and makes about 5 fat fluffy pancakes or double the amount skinny ninny ones, if that’s what you prefer :O)

2 cups self raising flour
1/4 cup caster sugar
2 eggs
1 1/2 cups milk
Place the flour and sugar in a bowl and whisk
In a separate bowl whisk the eggs and milk
Pur the wet into the dry and mix gently
Leave the batter to sit for at least half an hour
(this gives you time to prepare the fillings – the fun bit) 
When you’re ready to make them heat the pan on the hob
I have a little trick for greasing the pan …
Get yourself a knob of butter (the real stuff!)

Place the knob of butter in some kitchen towel.

Then rub the pan with the butter to grease it :O) 
(This is how I grease my baking tins for sponges etc)

Pour in your batter
We’re almost there
When bubbles start to appear on top it’s ready to turn over

Finally you end up with
fat fluffy scrumdiddlyumpscious pancakes.
I am a bit of a traditional girl and normally always go for sugar and lemon. 
However I also love nutella, banana and chopped hazlenuts

Mmmmmm think I might just make up another batch of batter now ……..

    We had ours on Sunday cos hubby always seems to get home late during the week! My favourite was nutella, strawberries and marshmallows!! I also like sugar and lemon too!

    I use a whole wheat buttermilk recipe: 1 cup whole wheat flour, 2 TBS sugar, 1/2 tsp baking soda, 1/4 tsp salt, 1 cup buttermilk, 1 egg, and 1 TBS canola oil. We traditionally eat ours with syrup and chopped banana or strawberries. But I like mine with a bit of peanut butter and jelly, too. Best wishes, Tammy

    Yummy pancakes!! I had whipping cream and black cherries on mine the first night, then the morning after lemon and sugar. I will have to try out the nutella with banana combination, I haven't tried that one before..sounds good!

    Hi good to meet you.

    I always add some melted butter to the batter for that extra oompph. I used to love pancakes, but now standing there cooking them for my girls the smell of them makes me feel sick. I used to pack a fair few away too so I suppose it's a good thing to have gone off them.
