Sometimes the recipes we randomly make up are the best, this is one of them for me. I had some bananas that I was going to use to make banana cake but also some natural yoghurt that needed to be used so this is what I came up with.
Banana and Walnut Soda Bread recipe
Ingredients
400g self raising flour
1/2tsp bicarbonate of soda
1 tblsp dark brown sugar
2 Tblsp caster sugar
2 medium ripe bananas
225 ml natural yoghurt
Handful of walnuts
Method
Preheat oven to 180
Mix all the dry ingredients in a bowl.
In a jug mash the banana in with the yoghurt, add a little milk if it’s quite thick.
Pour the wet mixture into the dry ingredients.
Using your hand (in a claw shape) bring the mixture together. It will be quite sticky! Don’t panic.
Make into a round soda shape and place on floured baking tray.
If you want to be really traditional you can add the cross to the top of the bread. There are several interpretations to what this symbolises. Some believe it was to bless the bread and give thanks, some say it was for good luck, others say it was to let the fairies or devil out or just for good luck.
Bake for 30-40 mins or until the base sounds hollow when tapped.
Lather with real butter and enjoy.
